Ultimate Father's Day BBQ Cheeseburger

Instructions
- Step 1: Preheat the recteq to LO, about 180ºF.
- Step 2: In electric stand mixer with a paddle attachment or in a large bowl by hand, add the ground beef, Ben's Heffer Dust, Chef Greg's 4 Letter Rub, garlic, onion, and thyme.
- Step 3: Mix well until fully combined. Be sure not to over mix beef. Create 4 equal burger patties.
- Step 4: Place burger patties on the recteq Mesh Cooking Mat, and place into the recteq on the side closest to the drip bucket. Smoke to an internal temp of 135°F. Remove from the recteq and allow to rest.
- Step 5: Turn recteq off and carefully change the foil on the drip pan if greasy. Turn recteq back on and set temp to 400°F.
- Step 6: Place burgers back in the recteq on a Mesh Cooking Mat, grill for 5 minutes on one side and flip. Add Harry's Secret Sauce to the tops of the burgers and brush sauce all over burger.
- Step 7: Add two pieces of cheese to the tops of each burger. Place burger buns on the recteq. When cheese is melted, remove burgers and buns.
- Step 8: Place burger on bottom bun, then add ketchup, mustard, mayo, and pickles on top of burger. Top with bun and serve.
