Beat the Heat with recteq

Chill out with these cool summer recipes right from the recteq library

Well, it’s officially hot-as-all-get-out here in the Deep South. With our long, grueling summers, it could be months before we get any real relief from these high temps. Wherever you are, we hope you are making it through the heat waves without losing your cool. It’s a great time to skip the indoor kitchen altogether and get familiar with the recteq App to make monitoring your outdoor cooks even easier than ever. (That way you’ll be out of the heat AND out of the kitchen). With our app you can check temps, browse recipes, and even adjust the temperature, all from the comfort of your indoor air conditioning.

Although there is nothing better than a hot steak or BBQ sandwich on a summer day, you might be craving some not-so-hot options as well. If you're ready to put the brakes on hot meals and get some chilled options on the table, you’ve come to the right place. At recteq, our culinary team has some amazingly cool summer eats for you that we know you’ll enjoy. These are served chilled but still have all the smoky flavors you love, fresh from the wood pellet grill. Plus, your kitchen can stay nice and cool while you rely on the recteq to do all the heavy lifting for you.

Chicken Salad

This is one of our favorite ways to use up leftover chicken, but it can be a recipe destination all on its own. For step-by-step video instructions, click over to Chef Greg’s video. There are so many ways to season and serve when it comes to chicken salad; the variations can go on and on. Start with some nice smoked chicken and add your favorite recteq rubs and mayo. We've got two versions to share, including Chef John's new recipe: Smoked BBQ Chicken Salad. We've also got the classic version: Smoked Chicken and Candied Pecan Salad recipe that relies on Smoked Split Chicken breast, mayo, and Rossarooski’s Honey Rib Rub plus Ben’s Heffer Dust. Looking for a healthy alternative? Try avocado in place of mayo and bump up the fiber with some crunchy chopped celery.

Jerk Chicken Lettuce Wraps

Low-carb, colorful, and bursting with tropical flavor, these Jerk Chicken Lettuce Wraps are a must-try summer recipe. You’ve got ginger, soy sauce, garlic, habanero, lime, and more incredible spices to give these marinated chicken thighs loads of flavor. Add that tastiness to your lettuce wraps topped with our Tropical Salsa courtesy of Jody’s Asian Persuasion Rub and what you have is a resort-worthy meal simple enough to cook up on a summer weeknight. You can serve this dish while it’s still a little warm from the wood pellet grill, or allow it to chill for a crisp, fresh taste everyone will love.

Grilled Broccoli & Bacon Salad

Ahhh! Broccoli and bacon: a classic combo that makes for a refreshing change in the hot months. Start with pellet-fired roasted broccoli and add cheddar cheese, purple onions, and cranberries. This recipe becomes pure magic when you season it up with Ben’s Heffer Dust and Chef Greg’s 4 Letter Rub. All you need for this deliciousness is a Mesh Cooking Mat and a Sear Kit, and you’ll definitely get plenty of use out of both. For more step-by-step visual instructions and pro tips, check out Chef’s John video on Grilled Broccoli and Bacon Salad.

Smoked Gouda Pimento Cheese Sandwich

Ready to level up your sandwich game? The summer is the perfect time to try a new twist on Pimento Cheese, with this unbelievable Smoked Gouda Pimento Cheese Sandwich. Even if it’s hot enough to melt cheese on the sidewalk, you can catch a break with this savory combo that relies on two kinds of cheeses, Worcestershire sauce, Chef Greg’s 4 Letter Rub and a little bit of wood-fired heat on the recteq grill.

New York Style Cheesecake

We may not talk about desserts quite as much as the meat, but you better believe recteq has a sweet tooth. Besides smoking, searing, and everything in between, your recteq wood pellet grill works perfectly to bake desserts to perfection. That goes for cakes, cookies, cobblers, and pies but for today’s post, you’ve got to try this New York Style Cheesecake. This rich and creamy cheesecake is just what you need after a long work week or an exhausting afternoon watching sports and monitoring your smoke status from the recteq app.

Now that you’ve seen the “cool” side of recteq, we hope you are beginning to realize just how versatile the recteq lifestyle really is. We like to say, the recteq isn’t a new way of grilling, it’s a new way of cooking. This is just the tip of the iceberg when it comes to cool cooks and we can’t wait to hear what else you come up with.
