If you thought your grill was only capable of steaks and BBQ, we are here to set the record straight and advocate for backyard baking this holiday season (and year-round). Thanks to PID control, your recteq is able to sustain precise temperatures, meaning it will keep a stable, temp-controlled environment perfect for baking all of your favorite holiday recipes from bread to fudge. (In fact, your recteq might keep steadier temperatures than your oven, especially if your range is an older model.) The sky is the limit with recteq: think bread, biscuits, pies, cobblers, brownies, cookies and so much more. The “cozy season” is the perfect time to start using your grill for delicious baked treats that will be perfect served with your upcoming holiday meals!
Backyard Baking Tips
First off, here are some general guidelines and tips for baking like a pro on your recteq wood pellet grill. A general tip for translating recipes to the recteq is to bump up the temperature about 25°F higher than the recipe recommends. Enameled cast iron pans and pots work great for baking breads and cake, but any oven-safe dish will be fine. If you are going with a darker, coated pan it may brown up a little quicker than, say, a glass baking dish so take that factor into account.
Baking Must-haves
If you plan to mix up some cookies, our Mesh Cooking Mat is the perfect accessory. Depending on your grill, you can bake up dozens of cookies in one big batch. Think how quickly you can knock out baked gifts for neighbors or coworkers when you use the recteq instead of the oven! To look the part, grab our recteq Pitmaster Apron. It isn’t just for BBQ, it’s a great way to keep your outfit flour-free when whipping up baked goods like cobblers, cakes, or pies. If you are interested in spicing up the smoke for your baking adventures, you might want to try our brand new Apple Hardwood Pellets or Cherry Hardwood Pellets for a boost of wood-fired sweetness. We also have a Pellet Variety Pack giving you a taste of all four 100% hardwood pellet options. Now, let’s get to our Favorite Baked Recipes!
Carrot Cake
Carrot Cake is more than dessert, it’s a seasonal masterpiece. With fresh grated carrot, cinnamon, raisins, and vanilla, this delicious cake combined with a rich cream cheese frosting will be better than ever, baked with a touch of smoke right in the backyard. This recipe is one you’ll want to double!
Apple Cake
When it comes to cakes this recipe is a winner any time of year. Apple Cake with Caramel Glaze has the classic cinnamon apple combination everyone loves with a delectable caramel drip glaze. This rustic cake is perfect served in the cooler months when apples are plentiful. Craving more apple-based hits? Check out our Autumn Apple Celebration post with all the delicious details.
Grilled Pina Colada Cake
Maybe a trip to the tropics is what we all need this holiday season! Try our newest dessert offering, Grilled Pina Colada Cake for a fresh sweetness from coconut extract, a hint of rum and, for a spicy surprise, our favorite Chef John’s Soul Powder. A burst of fruit and coconut makes this one a fun alternative to a classic vanilla or chocolate cake and it makes a nice presentation, too.
Vanilla Bean Crème Brulee
It's an upscale version of a classic dessert and our simplified version is as easy as it gets. Try Vanilla Bean Crème Brulee for a subtle, sweet contrast to those heavy holiday meals. These single-serve desserts will be baked in ramekins in a pan of water, straight on the grill. With fresh vanilla beans and a striking freshly torched finish, your sweet tooth will be fully satisfied with this treat.
Molten Chocolate Lava Cake
It's rich, it’s decadent and it will be absolutely stunning on your holiday table. We say, there’s nothing better than chocolate unless it’s chocolate on the recteq. Try our Molten Chocolate Lava Cake for the ultimate sweet treat. For the holidays, dress this dessert up with fresh raspberries or cranberries for extra “brownie” points from your fan club.
New York Style Cheesecake
How can anyone not love Cheesecake? Surely, we can all agree it’s one of the most delicious desserts of all time, especially smoky and golden from your wood pellet grill. Our New York Style Cheesecake is just as simple as can be, but the results will be everything you hoped. We’ve made it the traditional way with just one twist: cook it on the recteq and you’ll never go back to baking in the kitchen!
This is just the tip of the dessert iceberg when it comes to sweet treats on your recteq wood pellet grill. What have you baked on the recteq lately?
