Jalapeño Creamed Corn is the flavorful side to match up with your favorite main course.
Instructions
- Step 1: Burning the Cherry pellets, preheat recteq to 350°F with a cast iron skillet inside.
- Step 2: Melt the butter in the skillet.
- Step 3: Add diced onions and jalapeños, and sauté until soft, about 4–5 minutes.
- Step 4: Stir in corn and cook another 3 minutes, letting some of the kernels get a little golden.
- Step 5: Add cream, milk, and cream cheese. Stir until smooth and melty.
- Step 6: Fold in shredded cheddar and pepper jack. Stir until everything is ooey-gooey and well combined.
- Step 7: Season with Ron’s Screamin' Pig Rub and a pinch of sugar.
- Step 8: Let it cook for 15–20 minutes until bubbly and slightly golden on top.
- Step 9: Pull skillet off recteq, garnish with chopped green onions or extra jalapeño slices, and let it rest 5 minutes before serving.
