SmokeStone Bacon Pancakes

Simple and delicious Bacon Pancakes from the world's only wood fired griddle, the recteq SmokeStone!
Instructions
- Step 1: Burning the recteq Apple Pellets, preheat SmokeStone to medium heat until it reaches about 375°F-400°F.
- Step 2: Season bacon strips evenly with Rossarooki's Honey Rib Rub and lay evenly down on the SmokeStone, making sure not to overlap. Flip after about 5 minutes.
- Step 3: While bacon is cooking, in a large bowl mix together pancake mix and water. Whisk until most lumps are gone. After bacon is almost fully cooked, pour a circle of pancake batter over each slice of bacon until the bacon is covered by the pancake.
- Step 4: Cook until top is bubbly and edges start to dry. Flip and continue cooking until other side is golden brown, for about 1 minute.
