New Mexico Red Chili Ribs

Instructions
- Step 1: Grind at least 4 dried chili pods using a spice grinder. (Taste and adjust total chili pods for desired heat)
- Step 2: Split powder into 2 bowls, reserving one for later.
- Step 3: Combine half powdered chili with 2 parts kosher salt, 2 parts black pepper, 1 part garlic powder, and 1 part onion powder.
- Step 4: Mix remaining chili powder with 8 ounces of Stevie's Habanero Honey, 1 teaspoon of kosher salt, and 1 teaspoon of black pepper.
- Step 5: Add 1 ounce of bourbon whiskey.
- Step 6: Stir to combine.
- Step 7: Trim ribs and remove silver skin (membrane).
- Step 8: Apply rub to ribs and let rest until salt dissolves.
- Step 9: Place in preheated recteq at 225°F.
- Step 10: After approximately 3 hours, brush a thin coat of honey chili sauce on all sides.
- Step 11: When ribs pass crack test, pull off and brush a thin coat of honey chili sauce on all sides.
- Step 12: Tent and let rest.
- Step 13: If you prefer your sauce warm, brush on any remaining honey chili sauce before serving.
